When I remodel my kitchen, I will most likely remove the drywall in order to expose the brick where the stove ?

You make several good points. The entire room is drywall, and I plan to replace the existing cabinets and doors with new ones. If the surface is not flush or flat, sheetrock will probably be the best option.

    What do the other 3 walls look like?
    If they are all drywall, plaster may look out of place.
    If the wall is going to be covered with cabinets then you may never see the wall again. In any case you are going to want a relatively flat surface to mount your cabinets. It may be faster and easier to do this with sheetrock rather than layering fills of plaster.

    I would use plaster only, if you want a plaster look.. other wise sheet rock for me. sounds like you want to expose the brick for esthetics’s, that would look nice. But would not be my choice for a grease barrier as it wont clean easily. And how will you transition from the thickness of the either wall covering to the brick?. If the SR is in good condition, but you want some old word look for the grease barrier. ,google”hammered copper” or”brick facade panels” to apply over your existing SH.or the new SH..
